Frosted Pumpkin Cookies

Last night my daughter and I did some baking together.

I baked a Pumpkin Pie



She surfed the net and found another recipe for Pumpkin Cookies. It is different from the other recipe I use. I have to say these cookies turned out delicious.

They're very moist and soft and cheap to make too, which is always a plus. Here are a few pictures and the recipe:



Frosted Pumpkin Cookies

2 1/2 cups Self Rising Flour
2 tsp Cinnamon
1/2 tsp Nutmeg
1/2 tsp Cloves
1/2 cup Butter (Softened)
1 1/2 cups Granulated Sugar
1 cup Pumpkin Puree (canned or your processed and frozen pumpkin)
1 Egg
1 tsp Vanilla

Frosting:

2 cups Confectioner's Sugar
3 tbs Milk
1 tbs Melted Butter
1 tsp Vanilla

Preheat Oven to 350.

Combine flour, cinnamon, nutmeg and cloves, set aside.

Cream butter and sugar until well blended.

Add pumpkin, egg and 1 tsp vanilla to butter mixture. Mix well until blended and creamy. Add dry ingredients, mixing well.

Drop on cookie sheet by tablespoonfuls and flatten slightly.

These become huge cookies at about 3" across. So, you may want to reduce the amount you drop onto your cookie sheet.

Bake these 15 to 20 minutes. It took 15 minutes in our oven.

If you find your cookies are getting dark on the bottom before getting done, place an additional pan underneath the cookie sheet. We always double cookie sheets to prevent burning the bottom of our cookies.

These are done when barely browning around the edges and tops will spring back similar to a cake when touched.

Remove from pan after one minute and cool on wire racks before frosting.


To Make Frosting:

Mix all ingredients well. Add milk as needed to achieve desired consistency. Drizzle on top of cookies or just spread the entire top with frosting for a major sugar fix, that's what we did ; )

This is one recipe I would highly suggest to anyone who likes pumpkin. Our next test is to try making it with the Hubbard Squash I processed.
