Bacon Cheddar Potato Cakes

2 cups Mashed Potatoes
4 slices Bacon, fried, drained and crumbled
1 Egg, beaten
Salt
Pepper
Shredded Cheddar Cheese
Butter

In a mixing bowl combine potatoes, crumbled bacon, egg, salt and pepper. Mix well.
Place frying pan with butter on medium heat. Wait for the butter or grease to become bubbly hot so the cakes will come out crispy. Once bubbly, place the potato mixture into the frying pan by spoonfuls. Fry about 5 minutes on each side or until crispy golden brown. Remove to a paper towel covered plate to drain. While they're still hot sprinkle the top lightly with shredded cheddar cheese. To keep these hot and assist the cheese in melting, create a tent over the plate with aluminum foil. Don't cover the plate completely tight with the foil or the cakes will sweat and will no longer be crispy. Just make a nice tidy little tent and they'll be fine :)
